Sichuan Mapo Tofu
Sichuan Mapo Tofu is a spicy and flavorful Chinese dish made with tofu, ground pork, and Sichuan peppercorns.
Ingredients - Serves 4
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Green onions - 2 stalks, chopped
- Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
- Chicken broth - 1 cup
- Soy sauce - 2 tablespoons
- Chili bean paste - 2 tablespoons
- Sichuan peppercorns - 1 tablespoon, crushed
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Ground pork - 1/2 lb
- Soft tofu - 1 block (14 oz), cubed
Let's Get Started
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the minced garlic, ginger, and crushed Sichuan peppercorns. Stir-fry for about 1 minute until fragrant.
- Add the ground pork and cook until browned, breaking it up into small pieces.
- Add the chili bean paste and stir-fry for another minute.
- Add the cubed tofu and gently stir to coat it with the sauce.
- Pour in the chicken broth and soy sauce. Bring to a simmer and cook for 5 minutes.
- Stir in the dissolved cornstarch mixture to thicken the sauce.
- Season with salt to taste.
- Garnish with chopped green onions.
- Serve hot with steamed rice.
