Shrimp Creole
This delicious shrimp creole is a classic Louisiana dish made with shrimp, tomatoes, and a flavorful blend of spices.
Ingredients - Serves 4
- Green onions - 1/4 cup, chopped
- Cooked rice - 4 cups
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Bay leaf - 1
- Chicken broth - 1 cup
- Tomato paste - 2 tablespoons
- Tomatoes - 2 cups, diced
- Garlic - 3 cloves, minced
- Celery - 2 stalks, chopped
- Green bell pepper - 1, chopped
- Onion - 1 large, chopped
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a large skillet, heat some oil over medium heat.
- Add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the tomatoes, tomato paste, chicken broth, bay leaf, cayenne pepper, paprika, thyme, salt, and pepper. Stir well to combine.
- Bring the mixture to a simmer and let it cook for 10 minutes, stirring occasionally.
- Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 5 minutes.
- Remove the bay leaf from the skillet and discard.
- Serve the shrimp creole over cooked rice and garnish with chopped green onions.
