Ingredients - Serves 2
- Fresh cilantro - 2 tablespoons, chopped
- Cheddar cheese - 1/2 cup, shredded
- Butter - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Milk - 2 tablespoons
- Eggs - 4
- Avocado - 1, ripe, sliced
- Shrimp - 8 ounces, peeled and deveined
Let's Get Started
- In a bowl, whisk together the eggs, milk, salt, and black pepper.
- Heat the butter in a non-stick skillet over medium heat.
- Add the shrimp and cook for 2-3 minutes, until pink and cooked through. Remove from the skillet and set aside.
