Shrimp and Artichoke Salad with Herb Dressing

Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh herbs (parsley, dill, chives) - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Cucumber - 1, sliced
- Cherry tomatoes - 1 cup, halved
- Mixed salad greens - 4 cups
- Artichoke hearts - 1 can, drained
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Heat the olive oil in a skillet over medium heat. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove from heat and set aside.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and artichoke hearts.
- In a small bowl, whisk together the lemon juice, chopped herbs, salt, and pepper. Slowly drizzle in the remaining olive oil, whisking continuously until the dressing is emulsified.
- Add the cooked shrimp to the salad. Drizzle the herb dressing over the top and toss to combine.
