  1. Cut the pork belly into 1-inch thick pieces.
  2. Heat a pot over medium heat, add the sugar and melt it until it turns into a caramel color.
  3. Add the pork belly pieces to the pot and brown them in the caramelized sugar.
  4. Add the ginger, dark soy sauce, light soy sauce, Shaoxing wine, star anise, and water to the pot.
  5. Cover the pot and simmer for about 2 hours, or until the pork is tender and the sauce has thickened.
  6. Serve the braised pork with steamed rice.
