Sesame Shrimp and Cucumber Wraps
These refreshing sesame shrimp and cucumber wraps are perfect for a light and healthy meal.
Ingredients - Serves 2
- Lettuce leaves - 4 large
- Fresh cilantro - 1/4 cup, chopped
- Sesame seeds - 1 tablespoon
- Honey - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cucumber - 1 large, thinly sliced
- Shrimp - 12 large, cooked and peeled
Let's Get Started
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, and sesame seeds.
- Place the cooked shrimp in a separate bowl and pour the dressing over them. Toss to coat the shrimp evenly.
- Take a lettuce leaf and place a few cucumber slices on it.
- Add 3 shrimp on top of the cucumber slices.
- Sprinkle with chopped cilantro.
- Fold the sides of the lettuce leaf over the filling and roll it up tightly.
- Repeat with the remaining lettuce leaves and filling.
- Serve the sesame shrimp and cucumber wraps as a refreshing appetizer or light meal.
