Indonesian Satay Skewer Wraps
These Indonesian satay skewer wraps are a delicious and flavorful dish filled with marinated grilled chicken, fresh vegetables, and a creamy peanut sauce.
Ingredients - Serves 4
- Tortilla wraps - 4
- Satay sauce - 1/2 cup
- Fresh cilantro - 1/4 cup, chopped
- Red onion - 1, thinly sliced
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Lettuce leaves - 8
- Coconut milk - 1/2 cup
- Peanut butter - 1/4 cup
- Brown sugar - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Lime juice - 2 tablespoons
- Soy sauce - 1/4 cup
- Chicken breast - 2, boneless and skinless
Let's Get Started
- In a bowl, combine the soy sauce, lime juice, minced garlic, grated ginger, and brown sugar. Mix well.
- Cut the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 20 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken strips onto skewers and grill for about 5-7 minutes on each side, or until cooked through.
- In a small saucepan, combine the peanut butter and coconut milk. Heat over low heat, stirring constantly, until the mixture is smooth and creamy.
- To assemble the wraps, place a tortilla wrap on a flat surface. Spread a spoonful of satay sauce on the wrap.
- Top with grilled chicken, lettuce leaves, cucumber slices, julienned carrot, sliced red onion, and chopped cilantro.
- Drizzle some more satay sauce over the fillings.
- Fold the sides of the tortilla towards the center, then roll it up tightly.
- Repeat with the remaining tortilla wraps and fillings.
- Serve the Indonesian satay skewer wraps with extra satay sauce on the side for dipping.
