Senbei
Senbei is a traditional Japanese rice cracker that is crispy and savory.
Ingredients - Serves 6
- Vegetable oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Short-grain rice - 2 cups

- Wash the rice thoroughly and cook it according to the package instructions.
- In a small bowl, mix together soy sauce, mirin, sugar, and salt to make the seasoning sauce.
- Once the rice is cooked, transfer it to a large mixing bowl and let it cool slightly.
- Add the seasoning sauce to the rice and mix well to evenly coat the rice grains.
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Take a small handful of the seasoned rice and flatten it into a thin round shape on the prepared baking sheet.
- Repeat with the remaining rice, leaving some space between each cracker.
- Brush the flattened rice with vegetable oil.
- Bake in the preheated oven for 15-20 minutes, or until the senbei turn golden brown and crispy.
- Remove from the oven and let them cool completely before serving.
