Seared Tuna Niçoise Salad
This is a classic French salad that combines seared tuna with a variety of vegetables and a tangy vinaigrette.

- Extra virgin olive oil - 1/2 cup
- Red wine vinegar - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Anchovy fillets - 8
- Hard-boiled eggs - 4, quartered
- Kalamata olives - 1/2 cup, pitted
- Red onion - 1/2, thinly sliced
- Cucumber - 1, sliced
- Cherry tomatoes - 1 cup, halved
- Mixed salad greens - 8 cups
- Salt and pepper - To taste
