Tomato and Cucumber Bruschetta
This refreshing bruschetta is made with ripe tomatoes, crisp cucumbers, and fresh herbs.
Ingredients - Serves 4
- Salt and pepper - To taste
- Balsamic vinegar - 1 tablespoon
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 1/4 cup, chopped
- Fresh basil - 1/4 cup, chopped
- Red onion - 1/4 cup, finely chopped
- Cucumber - 1, diced
- Tomatoes - 2, diced
- Baguette - 1
Let's Get Started
- Preheat the oven to 350°F.
- Slice the baguette into 1/2-inch thick slices.
- Place the baguette slices on a baking sheet and brush both sides with olive oil.
- Bake for 10 minutes, or until the bread is toasted and crispy.
