Seafood Chowder with Fresh Herbs
A creamy, hearty chowder packed with a variety of seafood and fresh herbs.
Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh herbs (parsley, dill, chives) - 1/4 cup, chopped
- Heavy cream - 1 cup
- Mixed seafood - 1 pound
- Fish stock - 4 cups
- Potatoes - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the potatoes and fish stock. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Add the seafood and cook until it is cooked through, about 5 minutes.
- Stir in the heavy cream and fresh herbs. Season with salt and pepper.
- Cook for another 5 minutes, until the chowder is heated through.
- Serve hot, garnished with extra fresh herbs if desired.
