  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente.

  4. Reserve a cup of the pasta cooking water, then drain the pasta and add it to the pan with the sea urchin. Toss to combine, adding pasta water as needed to create a sauce.
  5. Season with salt and pepper, then stir in the parsley and lemon zest.
  6. Serve the pasta immediately, garnished with additional parsley and lemon zest if desired.
