This is a luxurious pasta dish featuring the unique and delicate flavor of sea urchin. It's a gourmet recipe that's surprisingly easy to make at home.
Ingredients - Serves 4
- Lemon zest - 1 teaspoon
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- White wine - 1/2 cup
- Sea urchin roe - 100 grams
- Red pepper flakes - 1/4 teaspoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Cook the linguine in a large pot of boiling salted water until al dente.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant.
- Add the sea urchin roe to the skillet and cook for 1-2 minutes, until it begins to melt into the oil.
- Add the white wine to the skillet and bring to a simmer. Cook for a few minutes, until the alcohol has evaporated.
- Drain the linguine, reserving some of the pasta water. Add the linguine to the skillet and toss to combine with the sauce. If the sauce is too thick, add some of the reserved pasta water.
