Scabeccio Di Pesce

- Flour - For dusting
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Fresh parsley - 1 bunch, chopped
- Garlic - 2 cloves, minced
- White wine - 1/2 cup
- White wine vinegar - 1 cup
- White fish fillets - 4, about 150g each
Let's Get Started
- Season the fish fillets with salt and pepper, then dust with flour.
- Heat the olive oil in a large pan over medium heat. Add the fish and cook until golden brown on both sides. Remove from the pan and set aside.
- In the same pan, add the garlic and cook until fragrant.
- Add the white wine and vinegar, and bring to a boil. Reduce the heat and simmer for a few minutes.
- Return the fish to the pan, and spoon the sauce over the fillets. Cook for a few more minutes, until the fish is cooked through.
- Remove from the heat and let cool. Then, transfer the fish and sauce to a dish, cover, and refrigerate for at least 2 hours, or overnight.
- Before serving, sprinkle with fresh parsley.
