  1. Season the fish fillets with salt and pepper, then dust with flour.
  2. Heat the olive oil in a large pan over medium heat. Add the fish and cook until golden brown on both sides. Remove from the pan and set aside.
  3. In the same pan, add the garlic and cook until fragrant.
  4. Add the white wine and vinegar, and bring to a boil. Reduce the heat and simmer for a few minutes.
  5. Return the fish to the pan, and spoon the sauce over the fillets. Cook for a few more minutes, until the fish is cooked through.
  6. Remove from the heat and let cool. Then, transfer the fish and sauce to a dish, cover, and refrigerate for at least 2 hours, or overnight.
  7. Before serving, sprinkle with fresh parsley.
