Satoimo Simmered in Dashi

  1. Peel the satoimo and rinse under cold water to remove any residual dirt.
  2. Place the satoimo in a pot and cover with water. Bring to a boil and cook for 5 minutes.
  3. Drain the satoimo and return to the pot. Add the dashi, soy sauce, mirin, sugar, and sake.
  4. Bring to a simmer and cook for 20-25 minutes, or until the satoimo are tender and the sauce has thickened.
  5. Serve the satoimo warm, drizzled with the remaining sauce.
