Sansai Ramen
Sansai Ramen is a traditional Japanese noodle soup made with wild mountain vegetables and a flavorful broth.
Ingredients - Serves 2
- Nori (seaweed) - 2 sheets, sliced
- Soft-boiled eggs - 2
- Green onions - 2, sliced
- Sansai vegetables (e.g., bracken fern, bamboo shoots, wild mushrooms) - 2 cups, sliced
- Ramen noodles - 2 servings
- Salt - 1 teaspoon
- Mirin - 2 tablespoons
- Soy sauce - 3 tablespoons
- Water - 6 cups
- Kombu (dried kelp) - 2 sheets
- Dried shiitake mushrooms - 4
Let's Get Started
- In a large pot, soak the dried shiitake mushrooms and kombu in water for 30 minutes.
- Bring the pot to a boil, then reduce the heat and simmer for 20 minutes to make the broth.
- Remove the mushrooms and kombu from the broth and discard.
- Add soy sauce, mirin, and salt to the broth and stir well.
- Cook the ramen noodles according to the package instructions, then drain and set aside.
- In a separate pot, blanch the sansai vegetables in boiling water for 2-3 minutes, then drain.
- Divide the cooked ramen noodles into bowls and top with the blanched sansai vegetables.
- Pour the hot broth over the noodles and vegetables.
- Garnish with sliced green onions, soft-boiled eggs, and sliced nori.
- Serve hot and enjoy!
