  1. In a large pot, soak the dried shiitake mushrooms and kombu in water for 30 minutes.
  2. Bring the pot to a boil, then reduce the heat and simmer for 20 minutes to make the broth.
  3. Remove the mushrooms and kombu from the broth and discard.
  4. Add soy sauce, mirin, and salt to the broth and stir well.
  5. Cook the ramen noodles according to the package instructions, then drain and set aside.
  6. In a separate pot, blanch the sansai vegetables in boiling water for 2-3 minutes, then drain.
  7. Divide the cooked ramen noodles into bowls and top with the blanched sansai vegetables.
  8. Pour the hot broth over the noodles and vegetables.
  9. Garnish with sliced green onions, soft-boiled eggs, and sliced nori.
  10. Serve hot and enjoy!
