Ingredients - Serves 6

Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until fragrant and translucent.
  3. Add the chicken, beef, and pork to the pot. Season with salt, pepper, cumin, and oregano. Cook until browned on all sides.
  4. Add the water to the pot and bring to a boil. Reduce heat to low and simmer for 1 hour.
  5. Add the yucca, plantains, corn on the cob, potatoes, and carrots to the pot. Cook for an additional 30 minutes, or until the vegetables are tender.
  6. Remove the bay leaf from the pot and discard.
  7. Serve the sancocho hot, garnished with chopped cilantro.
