Sancocho
Sancocho is a traditional Latin American stew made with meat, vegetables, and spices.
Ingredients - Serves 6
- Water - 8 cups
- Bay leaf - 1
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Carrots - 2, peeled and sliced
- Potatoes - 2, peeled and diced
- Corn on the cob - 2 ears, cut into thirds
- Yucca - 1 pound, peeled and cut into chunks
- Plantains - 2, peeled and sliced
- Pork - 1 pound, cubed
- Beef - 1 pound, cubed
- Chicken - 1 whole, cut into pieces
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until fragrant and translucent.
- Add the chicken, beef, and pork to the pot. Season with salt, pepper, cumin, and oregano. Cook until browned on all sides.
- Add the water to the pot and bring to a boil. Reduce heat to low and simmer for 1 hour.
- Add the yucca, plantains, corn on the cob, potatoes, and carrots to the pot. Cook for an additional 30 minutes, or until the vegetables are tender.
- Remove the bay leaf from the pot and discard.
- Serve the sancocho hot, garnished with chopped cilantro.
