Ingredients - Serves 4

Let's Get Started

  1. Clean the duck and pat dry with paper towels.
  2. Rub the duck inside and out with the salt.
  3. Place the Sichuan peppercorns, star anise, ginger, and scallions inside the duck cavity.
  4. Seal the duck in a large plastic bag and refrigerate for 24 hours.
  5. Preheat the oven to 350°F.
  6. Place the duck on a rack in a roasting pan and pour the Chinese cooking wine over it.
  7. Roast the duck in the preheated oven for 2 hours, or until the skin is crispy and the meat is cooked through.
  8. Let the duck rest for 10 minutes before carving and serving.
