Salted Duck

Ingredients - Serves 4
- Chinese cooking wine - 1/2 cup
- Scallions - 3, cut into pieces
- Ginger - 1 piece, sliced
- Star anise - 5
- Sichuan peppercorns - 1 tablespoon
- Salt - 1/2 cup
- Whole duck - 1 (4 to 5 pounds)
Let's Get Started
- Clean the duck and pat dry with paper towels.
- Rub the duck inside and out with the salt.
- Place the Sichuan peppercorns, star anise, ginger, and scallions inside the duck cavity.
- Seal the duck in a large plastic bag and refrigerate for 24 hours.
- Preheat the oven to 350°F.
- Place the duck on a rack in a roasting pan and pour the Chinese cooking wine over it.
- Roast the duck in the preheated oven for 2 hours, or until the skin is crispy and the meat is cooked through.
- Let the duck rest for 10 minutes before carving and serving.
