Lu Zhu Huo Shao
A traditional Chinese dish, Lu Zhu Huo Shao is a hearty mutton stew that is perfect for cold weather. The mutton is slow-cooked until tender and served with a flavorful broth.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Green onions - 2, chopped
- Salt - To taste
- Sugar - 1 tablespoon
- Chinese cooking wine - 1/4 cup
- Soy sauce - 1/4 cup
- Cinnamon stick - 1
- Star anise - 2 pieces
- Garlic - 6 cloves, crushed
- Ginger - 1 piece, sliced
- Water - 2 liters
- Mutton - 1 kg, cut into chunks
Let's Get Started
- Rinse the mutton under cold water and place it in a large pot.
- Add enough water to cover the mutton and bring to a boil. Cook for a few minutes until the mutton changes color, then drain and rinse again.
- In the same pot, add the mutton, 2 liters of water, ginger, garlic, star anise, and cinnamon stick. Bring to a boil, then reduce the heat and simmer for 1 hour.
- Add the soy sauce, Chinese cooking wine, sugar, and salt. Continue to simmer for another hour, or until the mutton is tender.
- Adjust the seasoning if necessary, then add the chopped green onions and cilantro.
- Serve the stew hot with rice or noodles.
