Let's Get Started

  1. Rinse the mutton under cold water and place it in a large pot.
  2. Add enough water to cover the mutton and bring to a boil. Cook for a few minutes until the mutton changes color, then drain and rinse again.
  3. In the same pot, add the mutton, 2 liters of water, ginger, garlic, star anise, and cinnamon stick. Bring to a boil, then reduce the heat and simmer for 1 hour.
  4. Add the soy sauce, Chinese cooking wine, sugar, and salt. Continue to simmer for another hour, or until the mutton is tender.
  5. Adjust the seasoning if necessary, then add the chopped green onions and cilantro.
  6. Serve the stew hot with rice or noodles.
