Salted Caramel Popcorn

Ingredients - Serves 6
- Sea salt - To taste
- Vanilla extract - 1/2 teaspoon
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Light corn syrup - 1/4 cup
- Unsalted butter - 1/4 cup
- Granulated sugar - 1 cup
- Popcorn kernels - 1/2 cup
Let's Get Started
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Pop the popcorn kernels using a popcorn maker or on the stovetop.
- In a medium saucepan over medium heat, combine the sugar, butter, corn syrup, and salt. Bring to a boil while stirring consistently.
- Once the mixture is boiling, let it boil for 4 minutes without stirring.
- Remove the mixture from the heat and stir in the baking soda and vanilla extract.
- Immediately pour the caramel sauce over the popcorn. Use spoons to gently fold the caramel into the popcorn, making sure all of the popcorn is covered.
- Transfer the popcorn onto the lined baking sheet, spreading it out evenly.
- Bake in the oven for 30 minutes, stirring every 10 minutes.
- Remove the caramel popcorn from the oven and sprinkle with sea salt. Let it cool before breaking it into pieces and serving.
