Salted Caramel Ice Cream
A rich, creamy ice cream with a sweet and salty caramel swirl.
Ingredients - Serves 8
- Egg yolks - 6
- Vanilla extract - 1 teaspoon
- Sea salt - 1 teaspoon
- Whole milk - 1 cup
- Heavy cream - 2 cups
- Unsalted butter - 6 tablespoons
- Granulated sugar - 1 1/2 cups
Let's Get Started
- In a medium saucepan, melt the sugar over medium heat until it turns a deep amber color.
- Add the butter and stir until melted. Remove from heat.
- Slowly whisk in the heavy cream until smooth. Stir in the milk, sea salt, and vanilla extract.
- In a separate bowl, whisk the egg yolks. Slowly pour in some of the hot caramel mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a bowl. Cover and refrigerate until completely cool, at least 2 hours or overnight.
- Churn the mixture in an ice cream maker according to the manufacturer's instructions.
- Transfer the ice cream to a lidded container and freeze until firm, at least 4 hours or overnight.
