Salmorejo
Salmorejo is a creamy and chilled tomato soup from Spain. It's a simple and refreshing dish perfect for hot summer days.
Ingredients - Serves 4
- Serrano ham - 50g, for garnish
- Hard-boiled eggs - 2, for garnish
- Salt - To taste
- Sherry vinegar - 1 tablespoon
- Extra virgin olive oil - 150ml
- Garlic - 1 clove
- Bread - 100g, preferably a day old
- Ripe tomatoes - 1 kg
Let's Get Started
- Cut the tomatoes into quarters and place them in a blender.
- Add the bread, garlic, olive oil, vinegar, and salt to the blender.
- Blend until smooth, then pass the mixture through a sieve to remove the skins and seeds.
- Chill the soup in the refrigerator for at least 2 hours before serving.
- Serve the soup garnished with chopped hard-boiled eggs and small pieces of Serrano ham.
