Sabzi Polo
Sabzi Polo is a traditional Persian dish made with herbed rice and served with fish or chicken.
Ingredients - Serves 6
- Fish or chicken - 1 pound, cooked
- Salt - 1 teaspoon
- Butter - 4 tablespoons
- Garlic - 4 cloves, minced
- Green onions - 1 bunch, chopped
- Fresh herbs (parsley, dill, cilantro) - 2 cups, chopped
- Basmati rice - 3 cups
Let's Get Started
- Wash the rice thoroughly and soak it in water for 30 minutes.
- In a large pot, bring water to a boil and add salt. Drain the soaked rice and add it to the boiling water. Cook for 5 minutes, then drain.
- In a separate pot, melt the butter over medium heat. Add the minced garlic and sauté for 2 minutes.
- Add the chopped herbs and green onions to the pot and sauté for another 5 minutes.
- Add the partially cooked rice to the pot and mix well with the herbs and onions. Cover the pot and cook over low heat for 30 minutes, or until the rice is fully cooked and fluffy.
- Serve the Sabzi Polo with cooked fish or chicken on top.
