Gỏi Cuốn
Gỏi cuốn, also known as Vietnamese spring rolls, are a fresh and healthy appetizer. They are made with rice paper, fresh vegetables, herbs, and usually shrimp or pork.
Ingredients - Serves 4
- Carrot - 1, thinly sliced
- Cucumber - 1, thinly sliced
- Bean sprouts - 1 cup
- Lettuce - 8 leaves
- Fresh cilantro leaves - 1 cup
- Fresh mint leaves - 1 cup
- Rice vermicelli noodles - 2 cups, cooked
- Cooked shrimp - 16 pieces, peeled and deveined
- Rice paper wrappers - 8 pieces
Let's Get Started
- Dip a rice paper wrapper into warm water until it softens, then lay it flat on a clean surface.
- In the center of the wrapper, place a few pieces of shrimp, a handful of vermicelli noodles, a few mint and cilantro leaves, a lettuce leaf, some bean sprouts, and a few slices of cucumber and carrot.
- Fold the sides of the wrapper in over the filling, then roll it up tightly from the bottom, tucking in the filling as you go.
- Repeat with the remaining wrappers and filling.
- Serve the spring rolls whole, or cut them in half diagonally, with a dipping sauce of your choice.
