Runebergintorttu

Ingredients - Serves 8
- Powdered sugar - For dusting
- Raspberry jam - 1/2 cup
- All-purpose flour - 1 cup
- Cardamom - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Egg - 1
- Sugar - 1/2 cup
- Butter - 1/2 cup, melted
- Breadcrumbs - 1 cup
- Almonds - 1 cup, ground
Let's Get Started
- Preheat the oven to 350°F.
- In a mixing bowl, combine the ground almonds, breadcrumbs, melted butter, sugar, egg, vanilla extract, cardamom, and all-purpose flour. Mix well until a dough forms.
- Divide the dough into 8 equal portions and shape each portion into a small round cake.
- Make a small indentation in the center of each cake and fill it with raspberry jam.
- Place the cakes on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the cakes are golden brown.
- Remove from the oven and let them cool completely.
- Dust the cooled cakes with powdered sugar before serving.
