Roz Meammar
Roz Meammar is a traditional Middle Eastern rice dish cooked with meat and aromatic spices.
Ingredients - Serves 6
- Water - 4 cups
- Raisins - 1/2 cup
- Almonds - 1/2 cup, sliced
- Butter - 4 tablespoons
- Salt and pepper - To taste
- Turmeric - 1/2 teaspoon
- Cardamom - 5 pods, crushed
- Cinnamon - 1 teaspoon
- Garlic - 4 cloves, minced
- Onion - 1 large, finely chopped
- Lamb or beef - 500g, cubed
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
- Add the meat cubes to the pot and cook until browned on all sides.
- Add the cinnamon, cardamom, turmeric, salt, and pepper to the pot. Stir well to coat the meat with the spices.
- Add the soaked and drained rice to the pot and mix it with the meat and spices.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the rice is cooked and the meat is tender.
- In a separate pan, heat a tablespoon of butter and sauté the sliced almonds and raisins until golden.
- Serve the Roz Meammar hot, garnished with the sautéed almonds and raisins.
