Rooibos Tea Ice Cream
A unique and refreshing ice cream made with the distinct flavor of rooibos tea.
Ingredients - Serves 4
- Vanilla extract - 1 teaspoon
- Egg yolks - 5
- Sugar - 3/4 cup
- Heavy cream - 1 cup
- Whole milk - 2 cups
- Rooibos tea bags - 4
Let's Get Started
- In a medium saucepan, combine the milk and cream. Bring to a simmer over medium heat.
- Remove from heat and add the tea bags. Let steep for 15 minutes.
- Remove the tea bags, squeezing out any excess liquid.
- In a separate bowl, whisk together the sugar and egg yolks until well combined.
- Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract.
- Let the mixture cool completely, then churn in an ice cream maker according to the manufacturer's instructions.
- Transfer the ice cream to a lidded container and freeze for at least 4 hours before serving.
