Rooibos Tea Ice Cream

Ingredients - Serves 4

Let's Get Started

  1. In a medium saucepan, combine the milk and cream. Bring to a simmer over medium heat.
  2. Remove from heat and add the tea bags. Let steep for 15 minutes.
  3. Remove the tea bags, squeezing out any excess liquid.
  4. In a separate bowl, whisk together the sugar and egg yolks until well combined.
  5. Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  7. Remove from heat and stir in the vanilla extract.
  8. Let the mixture cool completely, then churn in an ice cream maker according to the manufacturer's instructions.
  9. Transfer the ice cream to a lidded container and freeze for at least 4 hours before serving.
