Roasted Salmon with Vegetables
This delicious roasted salmon dish is served with a medley of roasted vegetables.
Ingredients - Serves 4
- Fresh lemon - 1, sliced
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Garlic powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Red onion - 1, sliced
- Yellow bell pepper - 1, sliced
- Zucchini - 1, sliced
- Cherry tomatoes - 1 cup
- Asparagus - 1 bunch
- Salmon fillets - 4 pieces
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- In a bowl, toss the asparagus, cherry tomatoes, zucchini, yellow bell pepper, and red onion with olive oil, garlic powder, dried thyme, salt, and pepper.
