Halibut and Veggie Foil Packets

Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Fresh lemon - 1, sliced
- Fresh basil - 1/4 cup, chopped
- Garlic - 3 cloves, minced
- Cherry tomatoes - 1 cup
- Red onion - 1, sliced
- Red bell pepper - 1, sliced
- Yellow squash - 1, sliced
- Zucchini - 1, sliced
- Halibut fillets - 4 fillets
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Cut four large pieces of aluminum foil, approximately 12x12 inches each.
- Place a halibut fillet in the center of each foil piece.
- In a bowl, combine the zucchini, yellow squash, red bell pepper, red onion, cherry tomatoes, garlic, basil, olive oil, salt, and pepper. Toss to coat the vegetables evenly.
- Divide the vegetable mixture evenly among the foil packets, placing it on top of the halibut fillets.
