Roasted Root Vegetables

Ingredients - Serves 4
- Salt and pepper - To taste
- Rosemary - 1 tablespoon, chopped
- Olive oil - 3 tablespoons
- Potatoes - 2 medium, cut into 1-inch pieces
- Beets - 2 medium, peeled and cut into 1-inch pieces
- Parsnips - 2 large, peeled and cut into 1-inch pieces
- Carrots - 4 medium, peeled and cut into 1-inch pieces
Let's Get Started
- Preheat your oven to 400°F (200°C).
- Place the prepared vegetables in a large roasting pan.
- Drizzle the vegetables with olive oil, then sprinkle with rosemary, salt, and pepper. Toss to coat.
