  1. Preheat the oven to 325°F.
  2. In a bowl, mix together soy sauce, mirin, minced garlic, and grated ginger.
  3. Rub the pork shoulder with the soy sauce mixture, making sure to coat it evenly.
  4. Place the pork shoulder on a baking sheet and roast in the oven for 2-3 hours, or until the meat is tender and easily shreds.
  5. Remove the pork from the oven and let it rest for 10 minutes. Then, shred the meat using two forks.
  6. In a large pot, bring the chicken broth to a boil. Add the dried shiitake mushrooms and simmer for 10 minutes.
  7. Cook the ramen noodles according to the package instructions. Drain and set aside.
  8. Heat the sesame oil in a separate pan and sauté the sliced green onions for 2-3 minutes.
  9. To assemble the ramen bowls, divide the cooked noodles among 4 bowls. Top with the shredded pork, sliced green onions, soft-boiled eggs, and nori sheets.
  10. Pour the hot chicken broth with mushrooms over the toppings in each bowl.
  11. Serve the roasted pork ramen hot and enjoy!
