Ingredients - Serves 4
- Cornstarch - 1 tablespoon
- Balsamic vinegar - 1/4 cup
- Sugar - 1/2 cup
- Mixed berries - 2 cups
- Salt and pepper - To taste
- Duck breasts - 4
Let's Get Started
- Preheat the oven to 400°F.
- Season the duck breasts with salt and pepper.
- Place the duck breasts skin side down in a cold, oven-safe skillet.
- Turn the heat to medium and cook for 6-7 minutes, until the skin is browned and crispy.
- Flip the duck breasts and transfer the skillet to the preheated oven. Roast for 6-8 minutes for medium-rare.
- While the duck is roasting, combine the berries, sugar, and balsamic vinegar in a saucepan over medium heat.
- Cook until the berries are soft and the sauce has reduced by half, about 10 minutes.
- Mix the cornstarch with a little water to make a slurry, then stir into the berry sauce. Cook for another 2-3 minutes, until the sauce has thickened.
- Slice the roasted duck breasts and serve with the berry sauce.
