Stir Fried Tripes with Peppers
A spicy and flavorful dish that combines tender tripes with colorful bell peppers.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
- Sugar - 1 teaspoon
- Oyster sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Bell peppers - 2, one red and one green, sliced
- Tripes - 500 grams, cleaned and cut into strips
Let's Get Started
- Heat the vegetable oil in a wok or large frying pan over medium-high heat.
- Add the tripes and stir-fry for about 5 minutes, or until they are browned and crispy. Remove from the pan and set aside.
- In the same pan, add the garlic and bell peppers and stir-fry for about 3 minutes, or until the peppers are tender.
- Return the tripes to the pan and add the soy sauce, oyster sauce, sugar, and cornstarch mixture. Stir well to combine.
- Cook for another 2 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
