Roast Beef Po' Boy
A traditional Louisiana sandwich, the Roast Beef Po' Boy is a hearty meal filled with tender roast beef and topped with gravy.
Ingredients - Serves 4
- Pickles - 1 cup, sliced
- Tomatoes - 2, sliced
- Lettuce - 1 head, shredded
- Mayonnaise - 1/4 cup
- French bread - 1 loaf
- Beef broth - 4 cups
- Garlic - 4 cloves, minced
- Onions - 2, sliced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Boneless beef roast - 2 pounds
Let's Get Started
- Season the beef roast with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the roast and sear on all sides until browned.
- Add the onions, garlic, and beef broth to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 4 hours, or until the beef is tender.
- Remove the roast from the pot and shred with two forks. Return the shredded beef to the pot and stir into the gravy.
- Slice the French bread in half lengthwise and spread with mayonnaise.
- Layer the shredded lettuce, sliced tomatoes, and pickles on the bottom half of the bread.
- Top with the shredded beef and gravy, then cover with the top half of the bread.
- Slice into individual sandwiches and serve.
