Risoto de Camarão
A creamy, flavorful shrimp risotto from Brazil, perfect for a special dinner.
Ingredients - Serves 4
- Parsley - For garnish
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Parmesan cheese - 1/2 cup, grated
- Shrimp - 1 pound, peeled and deveined
- Chicken broth - 4 cups
- White wine - 1/2 cup
- Arborio rice - 1 cup
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat. Add the garlic and onion and cook until soft.
- Add the rice and cook for a few minutes, until it starts to become translucent.
- Add the wine and stir until it is absorbed by the rice.
- Add the chicken broth, one cup at a time, stirring constantly until each cup is absorbed before adding the next.
- When the rice is almost cooked, add the shrimp and cook until they are pink and cooked through.
- Remove from heat and stir in the Parmesan cheese and butter. Season with salt and pepper.
- Serve the risotto garnished with parsley.
