Let's Get Started

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a large bowl, combine the ricotta cheese and sugar. Beat in the eggs, one at a time, until well incorporated.
  3. Stir in the vanilla extract and lemon zest.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the ricotta mixture, stirring until just combined.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for about 60 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan on a wire rack for 10 minutes. Then remove the sides of the pan and let the cake cool completely.
  8. Before serving, dust the top of the cake with powdered sugar.
