Ricotta Cake

Ingredients - Serves 8
- Powdered sugar - For dusting
- Salt - 1/4 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 1 1/2 cups
- Zest of one lemon - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Eggs - 3 large
- Granulated sugar - 1 cup
- Ricotta cheese - 2 cups
Let's Get Started
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a large bowl, combine the ricotta cheese and sugar. Beat in the eggs, one at a time, until well incorporated.
- Stir in the vanilla extract and lemon zest.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the ricotta mixture, stirring until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for about 60 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan on a wire rack for 10 minutes. Then remove the sides of the pan and let the cake cool completely.
- Before serving, dust the top of the cake with powdered sugar.
