Rice a Roni
A homemade version of the classic boxed rice dish, this Rice-A-Roni recipe is just as easy and delicious.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Onion - 1/2, finely chopped
- Chicken broth - 2 cups
- Butter - 2 tablespoons
- Spaghetti - 1/2 cup, broken into pieces
- Long grain white rice - 1 cup
Let's Get Started
- In a large skillet, melt the butter over medium heat.
- Add the rice and spaghetti pieces, stirring to coat with the butter.
- Cook until the spaghetti pieces are golden brown and the rice is slightly toasted.
- Add the onion and garlic, cooking until the onion is translucent.
- Pour in the chicken broth, then season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
