Rhubarb and Oat Bars
These delicious rhubarb and oat bars are the perfect combination of sweet and tangy. They are made with a buttery oat crust and a rhubarb filling.
Ingredients - Serves 12
- Unsalted butter - 3/4 cup, melted
- Salt - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Brown sugar - 1 cup
- Oats - 1 1/2 cups
- All-purpose flour - 1 1/2 cups
- Lemon juice - 2 tablespoons
- Sugar - 1 cup
- Rhubarb - 4 cups, chopped
Let's Get Started
- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large bowl, combine the chopped rhubarb, sugar, and lemon juice. Let it sit for 10 minutes to macerate.
- In a separate bowl, mix together the flour, oats, brown sugar, baking powder, and salt.
- Pour the melted butter into the dry ingredients and stir until well combined.
- Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
- Spread the macerated rhubarb mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the rhubarb filling.
- Bake for 40 minutes, or until the top is golden brown and the rhubarb is bubbling.
- Allow to cool completely before cutting into bars.
