  1. Peel the lotus root and slice it thinly. Soak the slices in water for about 10 minutes to remove any bitterness.
  2. Drain the lotus root slices and pat them dry with a clean kitchen towel.
  3. Heat the vegetable oil in a deep fryer or large, deep saucepan to 375°F (190°C).
  4. Fry the lotus root slices in batches until they turn golden brown. This should take about 5-7 minutes per batch.
  5. Use a slotted spoon to remove the chips from the oil. Drain them on paper towels.
  6. While the chips are still hot, sprinkle them with salt.
  7. Serve the renkon chips immediately for the best flavor and texture.
