  1. Marinate the chicken pieces with lime juice, salt, and turmeric powder for 30 minutes.
  2. Heat vegetable oil in a deep frying pan or wok over medium heat.
  3. Fry the marinated chicken until golden brown and cooked through. Remove from the oil and drain on paper towels.
  4. In a mortar and pestle, grind the garlic and candlenuts into a paste.
  5. Heat 2 tablespoons of vegetable oil in a separate pan over medium heat.
  6. Add the shallots, red chili peppers, and the garlic-candlenut paste. Stir-fry until fragrant.
  7. Add the diced tomato, sugar, and salt. Cook for another 2-3 minutes.
  8. Serve the fried chicken with the spicy sambal sauce and steamed rice.
