Ayam Penyet
Ayam Penyet is a popular Indonesian dish consisting of fried chicken served with a spicy sambal sauce.
Ingredients - Serves 4
- Vegetable oil - For frying
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Tomato - 1, diced
- Red chili peppers - 5, sliced
- Shallots - 4, thinly sliced
- Candlenuts - 4, crushed
- Garlic - 4 cloves, minced
- Turmeric powder - 1 teaspoon
- Salt - 1 teaspoon
- Lime - 1, juiced
- Chicken - 1 whole, cut into pieces
Let's Get Started
- Marinate the chicken pieces with lime juice, salt, and turmeric powder for 30 minutes.
- Heat vegetable oil in a deep frying pan or wok over medium heat.
- Fry the marinated chicken until golden brown and cooked through. Remove from the oil and drain on paper towels.
- In a mortar and pestle, grind the garlic and candlenuts into a paste.
- Heat 2 tablespoons of vegetable oil in a separate pan over medium heat.
- Add the shallots, red chili peppers, and the garlic-candlenut paste. Stir-fry until fragrant.
- Add the diced tomato, sugar, and salt. Cook for another 2-3 minutes.
- Serve the fried chicken with the spicy sambal sauce and steamed rice.
