Refried Beans
These homemade refried beans are creamy, flavorful, and the perfect side dish for any Mexican meal.
Ingredients - Serves 6
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Chili powder - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Vegetable oil - 2 tablespoons
- Water - 6 cups
- Dried pinto beans - 2 cups
Let's Get Started
- Rinse the dried pinto beans under cold water.
- In a large pot, combine the rinsed beans and water. Bring to a boil, then reduce the heat and simmer for 1 hour or until the beans are tender.
- In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
- Add the cooked beans to the pan with the onion and garlic. Mash the beans using a potato masher or the back of a spoon.
- Stir in the ground cumin, salt, black pepper, and chili powder. Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot as a side dish or as a filling for burritos, tacos, or enchiladas.
