Ingredients - Serves 6

Let's Get Started

  1. Rinse the dried pinto beans under cold water.
  2. In a large pot, combine the rinsed beans and water. Bring to a boil, then reduce the heat and simmer for 1 hour or until the beans are tender.
  3. In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  4. Add the cooked beans to the pan with the onion and garlic. Mash the beans using a potato masher or the back of a spoon.
  5. Stir in the ground cumin, salt, black pepper, and chili powder. Cook for an additional 5 minutes, stirring occasionally.
  6. Remove from heat and stir in the lime juice and chopped cilantro.
  7. Serve hot as a side dish or as a filling for burritos, tacos, or enchiladas.
