Red Pepper Jelly
This sweet and tangy red pepper jelly is perfect for spreading on crackers or pairing with cheese.
Ingredients - Serves 8
- Salt - 1/4 teaspoon
- Pectin - 1 package
- Lemon juice - 2 tablespoons
- Apple cider vinegar - 1 cup
- Granulated sugar - 2 cups
- Red bell peppers - 4
Let's Get Started
- Wash the red bell peppers, remove the stems and seeds, and finely chop them.
- In a large saucepan, combine the chopped red bell peppers, granulated sugar, apple cider vinegar, lemon juice, pectin, and salt.
- Bring the mixture to a boil over medium-high heat, stirring constantly.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Remove the saucepan from the heat and let the mixture cool for 5 minutes.
- Pour the hot jelly into sterilized jars, leaving a 1/4-inch headspace.
- Seal the jars with lids and process in a boiling water bath for 10 minutes.
- Remove the jars from the water bath and let them cool completely before storing in a cool, dark place.
- The red pepper jelly is ready to be enjoyed!
