  2. In a large saucepan, combine the chopped red bell peppers, granulated sugar, apple cider vinegar, lemon juice, pectin, and salt.
  3. Bring the mixture to a boil over medium-high heat, stirring constantly.
  4. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  5. Remove the saucepan from the heat and let the mixture cool for 5 minutes.
  6. Pour the hot jelly into sterilized jars, leaving a 1/4-inch headspace.
  7. Seal the jars with lids and process in a boiling water bath for 10 minutes.
  8. Remove the jars from the water bath and let them cool completely before storing in a cool, dark place.
  9. The red pepper jelly is ready to be enjoyed!
