Let's Get Started

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, toss the diced apples with the lemon juice and set aside.
  3. In another bowl, combine the flour, baking powder, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
  5. Gradually beat in the flour mixture alternately with the milk, mixing just until incorporated.
  6. Fold in the apples and pour the batter into prepared pan. Sprinkle with demerara sugar.
  7. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
