Rau Xao
Rau Xao is a delicious Vietnamese stir-fried vegetable dish that is quick and easy to make.
Ingredients - Serves 4
- Green onions - 2 stalks, chopped
- Black pepper - To taste
- Salt - To taste
- Sugar - 1 teaspoon
- Oyster sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Assorted vegetables (e.g. broccoli, carrots, bell peppers, mushrooms) - 4 cups, sliced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat vegetable oil in a wok or large skillet over high heat.
- Add minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the sliced vegetables and stir-fry for 3-4 minutes until they are crisp-tender.
- In a small bowl, mix together soy sauce, oyster sauce, sugar, salt, and black pepper.
- Pour the sauce mixture over the vegetables and stir-fry for another 1-2 minutes until the vegetables are coated and heated through.
- Garnish with chopped green onions.
- Serve hot as a side dish with rice or noodles.
