Raspberry Crumble Bars

Ingredients - Serves 12

Let's Get Started

  1. Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture into the bottom of the prepared baking dish to form the crust.
  4. Spread the raspberry jam evenly over the crust. Scatter the fresh raspberries on top of the jam.
  5. In a separate bowl, combine the rolled oats, brown sugar, ground cinnamon, and vanilla extract. Mix well.
  6. Sprinkle the oat mixture evenly over the raspberries, covering the entire surface.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the raspberry filling is bubbling.
  8. Remove from the oven and let cool completely in the baking dish before cutting into bars.
  9. Serve and enjoy!
