Raspberry Crumble Bars
These delicious raspberry crumble bars are made with a buttery crust, sweet raspberry filling, and a crumbly oat topping.
Ingredients - Serves 12
- Vanilla extract - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Brown sugar - 1/2 cup
- Rolled oats - 1 cup
- Fresh raspberries - 1 1/2 cups
- Raspberry jam - 1 cup
- Unsalted butter - 3/4 cup, cold and cubed
- Salt - 1/4 teaspoon
- Granulated sugar - 3/4 cup
- All-purpose flour - 1 1/2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture into the bottom of the prepared baking dish to form the crust.
- Spread the raspberry jam evenly over the crust. Scatter the fresh raspberries on top of the jam.
- In a separate bowl, combine the rolled oats, brown sugar, ground cinnamon, and vanilla extract. Mix well.
- Sprinkle the oat mixture evenly over the raspberries, covering the entire surface.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the raspberry filling is bubbling.
- Remove from the oven and let cool completely in the baking dish before cutting into bars.
