Rack of Lamb with Rosemary Sauce

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Season the rack of lamb with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the rack of lamb and sear on all sides until browned, about 5 minutes.
  4. Transfer the skillet to the oven and roast for 15 minutes for medium-rare, or until desired doneness.
  5. While the lamb is roasting, make the rosemary sauce. In a small saucepan, heat the garlic and rosemary in the remaining olive oil over medium heat until fragrant.
  6. Add the red wine and beef broth and bring to a simmer. Cook until reduced by half, about 10 minutes.
  7. Remove from heat and stir in the butter until melted and smooth.
  8. Remove the lamb from the oven and let rest for 5 minutes. Slice and serve with the rosemary sauce.
