Rack of Lamb with Rosemary Sauce

Ingredients - Serves 4
- Butter - 2 tablespoons
- Beef broth - 1 cup
- Red wine - 1/2 cup
- Fresh rosemary - 2 tablespoons, chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Rack of lamb - 1, about 2 pounds
Let's Get Started
- Preheat the oven to 400°F.
- Season the rack of lamb with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the rack of lamb and sear on all sides until browned, about 5 minutes.
- Transfer the skillet to the oven and roast for 15 minutes for medium-rare, or until desired doneness.
- While the lamb is roasting, make the rosemary sauce. In a small saucepan, heat the garlic and rosemary in the remaining olive oil over medium heat until fragrant.
- Add the red wine and beef broth and bring to a simmer. Cook until reduced by half, about 10 minutes.
- Remove from heat and stir in the butter until melted and smooth.
- Remove the lamb from the oven and let rest for 5 minutes. Slice and serve with the rosemary sauce.
