Quinoa Salad with Veggies
A healthy, delicious salad packed with quinoa and fresh vegetables, dressed with a simple vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Red onion - 1/2, finely chopped
- Red bell pepper - 1, diced
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- Combine the quinoa and water in a saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water has been absorbed.
- Transfer the quinoa to a large bowl and let it cool.
- Add the cherry tomatoes, cucumber, red bell pepper, and red onion to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve the salad chilled or at room temperature.
