Quinoa Bowl
This nutritious quinoa bowl is packed with fresh vegetables and protein-rich quinoa.
Ingredients - Serves 2
- Fresh cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Avocado - 1, sliced
- Cherry tomatoes - 1 cup, halved
- Carrot - 1, grated
- Zucchini - 1, diced
- Red bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water.
- In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
- In a large skillet, heat the olive oil over medium heat.
- Add the red bell pepper, zucchini, and carrot. Cook for 5-7 minutes, or until the vegetables are tender.
- Add the cooked quinoa, cherry tomatoes, avocado, lemon juice, salt, and pepper to the skillet. Stir well to combine.
- Cook for an additional 2-3 minutes, or until everything is heated through.
- Remove from heat and sprinkle with fresh cilantro.
- Serve the quinoa bowl warm and enjoy!
