Let's Get Started

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the red bell pepper, zucchini, and carrot. Cook for 5-7 minutes, or until the vegetables are tender.
  5. Add the cooked quinoa, cherry tomatoes, avocado, lemon juice, salt, and pepper to the skillet. Stir well to combine.
  6. Cook for an additional 2-3 minutes, or until everything is heated through.
  7. Remove from heat and sprinkle with fresh cilantro.
  8. Serve the quinoa bowl warm and enjoy!
