Quinoa and Black Bean Chili

Ingredients - Serves 6
- Cilantro - 1 handful, chopped for garnish
- Avocado - 1, sliced for garnish
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Canned diced tomatoes - 1 can
- Canned black beans - 2 cans, drained and rinsed
- Vegetable broth - 2 cups
- Quinoa - 1 cup
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the quinoa, vegetable broth, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Stir to combine.
