Quahog Stuffies
Quahog Stuffies are a traditional Rhode Island dish made from large clams, bread crumbs, and various seasonings. They're a delicious appetizer or side dish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 2 tablespoons, chopped
- Parmesan cheese - 1/2 cup, grated
- Bread crumbs - 2 cups
- Red bell pepper - 1, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Butter - 4 tablespoons
- Large quahogs - 8
Let's Get Started
- Preheat the oven to 375°F.
- Steam the quahogs until they open, about 10 minutes. Remove the meat and chop it, reserving the shells.
- Melt the butter in a skillet over medium heat. Add the onion, garlic, and bell pepper and cook until soft, about 5 minutes.
- Stir in the chopped quahog, bread crumbs, Parmesan, parsley, salt, and pepper.
- Spoon the mixture into the reserved shells and place them on a baking sheet.
- Bake for 20 minutes, or until the tops are golden brown.
